Lets talk about prices.


Hello everyone, I am having a little problem. It seems the slow season is starting early for me.  every day I am pulling maybe a hundred pounds of outdated or turning meat out of the case.  Half of this goes to the kitchen to cook, half of it goes to my grinds. That is all getting to be a bit of problem because the kitchen can only cook so much and its making my grinds look pretty crappy.  I fully believe in and support the concept of not over cutting but the problem is they aren't buying even the little bit i do cut. so today i decided to dig up the invoices and do some calculations.  it appears that on almost every primal we cut and sell we are doing anywhere from 90 to 120% mark up and this includes things with little or no waste. for example we are paying 1.38 for boneless pork sirloin ends and we are selling them (or trying to sell them) for 2.99 a lb.  on this whole list of stuff that i calculated and compared to our current prices i found only one primal that i am comfortable with our price on and that was pork butts.  everything else i felt was rediculous and unneccessarly high priced.  today i did a little experiment and lowered my center cut chops to a 35% mark up  while they are normally a 100% mark up.  we sold them all but 2 i left for the day. that tells me my prices might be a big part of the problem because usually i don't sell those very well.  i understand that we have to make enough money to pay utilities and wages and other expenses but my thinking is if we keep pulling it its making even less money or none at all.  so ia m thinking about comfront my manger on this and insisting that our prices are too high and its hurting us and iw ould feel more comfortable and would beable to sell more meat if i had a 35% mark up on items with little or no waste and a 45% mark up on items with more waste.   can i get some opinion on this idea maybe i am over looking something and that the high prices really are neccessary for the good of the whole store.  someone once told me that if the prices are too low people won't buy it because they'll assume that is cheap crap but i really don't believe that.  so i really hope i can get some feed back on this... thank you.

sounds like thats all you can do is ask him about the prices. im goin threw the same thing. im sell turkeys at such a low price im not makin any money on them and everthing else has slowed down. hope it all works out man.

You know my ideas about pricing and you have seen my counter and our parking lot. Fair pricing, lots of signs, and good grinds thats what it takes! I so far have no steak above 9.99 and no roast above 3.99, I might be wrong but the people that matter ( bosses ) are happy!
