Ours is prime rib also. Whole tenderloins seem to have taken a bit of a hit the last couple Christmas seasons while rib roasts have held their own. With the price of ribs this year I may try marketing striploin roasts more.

RJ My friend wanted to do prime rib last year for christmas, Our whole strip loin Rst were on BOGO. I talked her into that and we seasoned it and cooked it the same as a prime rib. It was wonderful! They were so happy and said they were going to do it again this year. We have Everson spice company and they have a fantastic prime rib seasoning and we season peoples roast for free. Customers have really liked it also.
Yep, its hard to beat a good striploin. I have been buying Swift 1855 Choice black angus and the strips are the most tender I have come across.
I have heard of Everson spice, never used them. I use Newlyweds & Excalibur for my seasonings. And I agree, customers love having us season roasts for them. Its just that little extra that makes them love us so!

My best seller of the season are the bone-in hams. Just cured my first combo friday. I made and sold about 350 hams last year. Will post some pics next week when I get some done.
