Looking at market prices today it will be scary, unless of course you are a big chain and want to loose money big time! I paid $1.59/lb for shank on green hams, once I cure and smoke them its going to be a pretty sight, but the price may shock some.....fresh turkeys are way up too....we wont even mention choice rib eyes.....
