Those who are getting Grass Fed... How is the consistency? How do the suppliers maintain that?
We have gotten very good feedback on what we grow. However, the slaughter plants we deal with describe some really varying quality levels within this genre of Beef. A lot of people have jumped on the Bandwagon without the background to tell when a calf is ready.
So, when I hear of very commercial suppliers, I suspect many growers supplying. I just wonder how they keep a handle on it. Perhaps they have a buyer who actually picks out the cattle?
We have two suppliers currently, and both are very consistent. We have a grass-fed organic, which we would rate at select as there is never any marbling. We also have a 100% grass-fed, which is not cert org, but is consistently choice - this one is my favorite as it has a really nice flavor.
