Pete the last time I handle wet fish was with A&P in Atlanta, Ga. in the 70's. most fish you find nowadays here in the states has been frozen, let thaw before selling.

we use to sell a lot of fresh lamb in those days to, don't see much of that around these parts any more.
question, do you sell fresh craps to ? one market I use to have we kept them in a big wash tub behind the meat case, you get to close you had a crap hanging on your leg LOL
I handle some fresh fish. Depends on whats in season. Recently I've had fresh swordfish loins, yellowtail, haddock, chilean sea bass, soft shell blue crab, maine dry packed scallops, red snapper and a few others. I'm looking to try other fresh fish as no one in my market really does any fresh. The bulk however comes in frozen. Cutting meat is my specialty but I can fillet a fish pretty well too.
Hi, Just wondering if any of you out there (not supermarkets) sell wet fish as well as meat?
I'm a seaside butcher , just thought it was the way to go.

Welcome to Meatcutersclub. That's a beautiful display! I wish I had checked out the butcher shops when I lived in Dunoon (Scotland) in 1973-75, but I didn't know that I would become a meat cutter.
I work in a supermarket and we do have fresh fish (and frozen too). I had never heard the term "wet fish". Unlike many markets in my area, our fish is delivered directly to the store six days per week instead of first to a company warehouse where it sits (for how long??) before finally arriving at the store.
In the second picture of page one, I see a sign which I can read part of, but not all. It looks like it says "Proud to serve Welsh Beef". Is that correct? That reminds me of a sign I saw on a building in Scotland: "Best Scottish Beef from Wales". At the bottom it listed the butchers name "Wales" I thought that was so funny that I took a picture. I still have it.
