Wow quite the variety of protection styles out there :) I gotta say I always loved cutting bare handed, but that was also when I was working RIGHT NEXT to a large basin sink - it was always there to warm my hands with hot water or give them a quick rinse between meats, or when I needed a cleaner hand to hold my knife. (always hated holding my knife with a bloody hand - made it slippery) Nowadays with my cotton gloves, they're more of a pain, and they have a habbit of keeping bacteria close to your hands, but they are warmer. At least in the beginning of the day lol - since I work all the bone-in product, I get holes in the plastic gloves over them all the time and end up with wet cotton by the end of the day :( I would go back to bare handed in a heartbeat if I owned my own store and made the rules :)
