Anyone else get sick of being hounded for marrow bones? And special cut pet food?


All day long. Buzzer rings. "Got any marrow bones for my little dog?" "Let me check." Trudge back into the freezer. Dig out the box of femur bones. Usually there's already two or three boxes of knuckles that we've already cut the marrow bones off. Grab a couple femurs. Dull the crap out of my blade by cutting inch thick marrow bones. Repeat throughout the day until we have nothing but knuckles left in the freezer.

I swear if I was the meat manager I'd charge like $6 a pound for those stupid things. Just a pet peeve I guess.

meat monkey do you give them your  best customer service smile to go with them  lol I use to hate making the birdballs for the old ladies but I gave them the smile to as I was thinking bad thoughts lol

 It happens where I work too. For a while there, our manager said they had to buy half or all of it. No centers sold separate, but somehow we never stuck to that and like you, end up with a box full of ends. We do cut a lot of shanks and when they don't sell, we save the bones. That helps some.  Also, since we cut a lot of veal, that helps some with the situation. The whole femur and shoulder bones are small and a lot of people like them.

One pet peeve of mine is when people ask for "dog bones". I have never cut up a dog and have never seen it done. We can't get dog bones. However, we can get you a beef bone that any dog would like to chew on.

my store sells the center cuts now and been for several years now we boat them up and put them in the freezer and we cant keep them in stock !

marrow bones 3 inch cuts are best sales for our local restuarants and our old paa likes them so much for his soup, at the store/shop.

yeah it used to irritate the hell out of me.thankfully we don't seem to sell them at this store but we might eventually..what i don't like about them is they really dull up my band saw blade and we don't get enough out of them. Its not like in the old days when everything had a bone it ..these days most grocery stores get their round boneless. so if you want to sell bones you got to order a case of them. then one customer will come and buy the whole damn case and actually has to nerve to come back a week later and ask for more. I mean come on i am trying to fill my meat case with real meat for my REAL customers I don't have to time to chopping up frozen bones for your stupid mutt.

I keep a box of pre cut frozen steer bones in the back freezer at all times!

We would have to order a case of them and the boss says no.

People still ask for them all of the time though.

They will usually settle for a good shank bone when I tell them that is all I have.

A guy asked me for a pound of chicken livers the other day, said: foo foo was not feeling well
so he was going to go home and grind the livers and make her feel better..lol

Don't be so quick to diss them bones. You can up your margin REAL quick if you have steady demand for beef bones. You can turn 0.59$/lb cost into $2.99/lb easily.

Don't get me wrong, we cut a lot of bones. When I work at our Hispanic store, we cut a case of pig feet, a case of pork neck bones, a case of pig ear, a case of beef neck bones... at a time! Just, for some reason, marrow bones irritate me. We never have enough to keep a row in the case so its always a service buzzer. And its always some little old lady, and its always for her "little dog." And they absolutely kill that saw blade.

I saw Krogers the other day had gas packed marrow bones in their case (for a lot more than we charge). That's one thing I wouldn't mind getting pre-packed!

And yes Master Sawman--I do it with a smile!

And yes Larry, I use that line all the time. "Sorry, no dog bones." Customer looks at you weird. "Nope, health department won't let us cut dogs up anymore. Though sometimes we cut Chihauhaus up just for fun. Don't tell anyone..."

I'll bring home marrow bones every once in awhile. I give some to my dogs and I roast the rest off for myself. Mmmm...roasted marrow. It's pretty dang good. I'm totally gonna use that "Sorry, no dog bones." line next time someone asks.

 That's a funny response you have there Meat Monkey about dog bones. I used to cut a case of beef femurs every day or two at my old company (which BTW, I'm at later today on my day off from my current store). I never noticed that it dulls the saw blade. We'd package the pieces mixed in a 4D tray. I also used to cut a lot of pork neck bones. Maybe a case per day except on the slowest days. I remember throwing away lots of bones back when we still broke beef. If anyone wanted femur bones, they were free.

Larry, they're all old western and adventure novels from the 20s--mostly Zane Grey and Max Brand. Someone gave them to me because they knew I sell books on e-Bay sometimes. These aren't worth anything but they're kind of cool. I use them for decoration.

I sell cooked beef bones for $3. They sell like crazy. Since I dont cut any boxed meat its a great way to cut down on waste and make some money off an otherwise useless item!!!!!

We order the box of femur bones in as well, but for those that don't want that big of a bone or even cut down, we cut up the very end of the short loin after we remove the trim, throw a 1.69/lb on it and in the freezer the bag goes. Better than going in the bone can.

Used to be able to get them pre-packed. We kept them in the freezer section. Looked like a 9L just packed with 'em. Kind've pricey, but people paid for like it was not issue. Definitely had a long shelf life being frozen and all. I haven't seen them since I've traveled abroad for my company, but they're surely still out there.
