we usually do too. this customer wanted the drums and thighs left in. think we made 2 this past thanksgiving

Turkey, goose, duck, capon, chicken, hen
I hated those!!!

We bone out the drums, everything else also boneless, except the wings.

They are stuffed with sausage and breading inside and between each fowl... Fryer, Duck, Turkey.

It take two of us to tie it (cause its so slippery, one to hold and one to tie) but we use a needle and thread it through. 

Usually an expensive X-mas gift (x4) to our Italian friends.

Ever try to cook one? I personally do not like them either for cooking or eating. I've done a couple myself boning out all the bones in the two smaller birds and leaving the legs, thighs, and wings in the turkey. No problem tieing it up. Wipe it down with paper towels and keep your hands dry. Not worth the effort in my opinion though.

I have done these we call it "A bird in a bird in a bird" strangely enough.
It is a strange practice but the customer wants what the customer gets.
