pete, good looking case!!!
do you use steak paper in between layers? (fresh pork/red meat) to prevent dark spots?

do you wrap tray in film to keep from being dried out? lots of air flow in them cases (can get an extra day out of fresh beef/pork/chicken)

dont take any of this as criticism-youve got a great looking case!!

love the sausage and all the items in case!!

That is 6 feet of service case. Another 8 ft for seafood. My regular meat case is 40 feet.
