I use to take my biggest smoked picnic. cut off the bottom long ways 3/4 of a linc above the fat, I would slice it on the slicer and tray it out like bacon, the rest of the picnic I would slice, taking out two center slices and tray as a extra lean smoked picnic, saving the end for smoked hocks.
in those days we sold whole picnic for 39 cents a lb, I got 99 cents for the ham bacon, 59 cents for the lean sliced picnic, 79 cents for the picnic slices, hocks were 49 cents.
in one store in north west Fla. I use to sell three cases of smoked picnics a week like this. I had a good black trade in that store and a lot of older country people. They LOVED their ham bacon LOL
