Big Beef, All depends on your base brat recipe. IMO japs and cheddar or even plain ol American cheese go really well with a simple combo of black pepper, garlic, and marjoram.
One of our best sellers here was always the cheese and jalapeno snack stick made from venison or beef. 9 lbs of the proper meat/ fat ratio, and one pound of cheese to make a 10 pound mix. Just light of one ounce of japs per per pound. Heavy hickory smoke. Stuff in a 21mm casing. Customers went crazy over this one, had to keep raising the price to beat em back!
one of the new kinds i ordered in is leeks and peppers, and tomatto and mozza..........i thought that leek one was a little weired...i gotta buy some and give them a try

I've made jalapeno and cheddar brats off and on for about 10 years. They're very tasty but have never really caught on in my region. I'm more interested in a blueberry, maple and honey based pork sausage. Works well as a breakfast sausage and pasta sausage.
I have done Cherry and Blueberry Brats that sold pretty good too Maple breakfast sausage is awesome I will have to dig out all my recipes I can see last count I had 421 of them
