Next Question, To me the word Process is wrong for the title. I would use DEBONE
To me Process means cutting up and traying meat for sell or merchandising it in a over the counter case.
I only watched until about 6:15 in the video. Didn't see if he got to the hindquarter also. For sure the guy knows what he's doing. He's fast, but sloppy. However, he did say that this was "just for fun". He also said he's showing how game* could be processed quickly*
I bet he could slow down and leave the bones cleaner if he wanted. I found the video interesting. I've never seen a whole forequarter of beef boned out like that.
He might not be the one who posted and named the video clip. Maybe it was a friend who didn't know.
*I once saw a DVD (that you can buy for $60.00) of someone boning a deer carcass. He's supposed to be an expert, not just some amateur. Anyway, he was a hacker. His name is Richard "Little Bear" Wheeler. The thing is, this DVD is from "Mantell Ministries" and Wheeler maybe should stick to preaching. He does a fine job skinning and gutting, but he ruined a lot of meat.
There's a phrase for this... "Haste makes waste". In the retail markets we could get fired for something like this, he obviously isn"t some rookie doing this. Look at how he uses the hook, appears to have some wholesale experience in his background, and the knife he's using, a straight blade, most retail cutters I know use a curved blade. He does steel quite often, and not knifing the block as retail cutters have to do, otherwise very informative. Can you imagine having never done this before and trying it while looking at the video? "Hmmm, now what did he do with this part? Honey rewind that video, let me see it again...."
