Our butcher supply said they don't make them anymore. I would think some supply company must have one lying around. Anybody know where I could get one?
what is a mock chicken mold ! never heard of one of them, must be something used years ago.
Well it's a mold for making mock chicken legs. If you don't know what they are, it's sausage made from pork or veal or a combination of the two, seasoned with a variety of spices and quite often chicken broth. Then formed like a chik drumstick and breaded with corn flake crumbs. Lot of places still make them just forming by hand but they look nicer and it's faster if you have the mold. They're pretty good tasting and sell well.

This is incredible ! My Grandfather who opened his 1st butcher shop in 1907 used to make City Chicken. I recently found the mold on Ebay and I've been scouring the internet for the recipe, I remember it had Sage in it. The time frame of the recipe and book (1942) fits perfect. Can't wait to try them !
I think I like them even better just formed into a patty, fried and on a bun with lettuce, tomato, mayo! just like a regular chicken sandwich only better!
