I think you right, both. I know I been in the business awhile but some times older people ask me for steaks i've never heard of. a few times I've had to make a fast phone call to a older meat man friend of mine to ask what the hell are they talking about.
it is funny all these years we made up our own names for the cut of meats and you look on the diagram of beeg from the beef markets you don't see such names.Like cowboy steak,you remember where that comes from.
