I have a wrapper today as well as Saturday AND Sunday woohoo! She won't have to put up with a meat "God" but a Meat Godess! LOL just kidding ... I am happy to have a wrapper as I am on my own all weekend. I started my "To Do" list last night before I left Yes I am tired Yes I'll be ready for the ad change I hate Bogo's but with a wrapper it should be a snap! And how's your weekend going to pan out?
My day was really busy.....i was by my self with add change...cut and wrap meat and deli wall and freezer order to put up........
Im off sat but i loaded my case for my staff sat.so id say i hope i ready unless the meat gods send a hurricane of customers and clear me out..lol..( which might not be so bad..lol
Friday is a usual day for me. Sat, Myself and another cutter, along with my son as a wrapper fills up the cases and then cuts for Sunday. We have one guy to come in Sunday morn and fills up and then leaves. I like my Sundays off.
It's Day 6..........It's almost 10pm..........I have one day off(tomorrow)and the work the week out. I am having a cider and doing the email. I will probably have at least one more cider. That's how it is ;)
Friday was a pretty good day. I was on the main saw, bone-in blade. First one in the shop, at 7. Spent the first half an hour pulling the case, marking down, and filling. Would have been done sooner, but had to reorganize the rib and loin chops. Was a jumbled mess of rib chops with loins, loins with ribs, thicks mixed with thins. Got a hole list, and the second cutter came in at 8. Wrapper in at 8, grinder in at 9, night guy at 11. I was pretty beat, second cutter had the boneless saw blade, but he had a bunch of gourmet chicken to do up. (marinades, breaded, etc.) So I hit all the bone in stuff. Did about 10 pans of patties, 1/4 1/3 1/2's. Then made bacon and cheddar, then taco burgers. Then back to the table to cut roasts by hand, steaks on the boneless saw. Finished the day off cutting frozen shank meat, and knocking out a 100 cubed steaks for an order the following morning.
Weekend went kickass as usual. Cut a jag a meat, then sold it all. Posted great numbers considering spring break started. Weather is looking good. Expect steaks and burger to fly out the door even with Lent starting. St. Paddy's? It's all about the in-house corned beef brisket and round. I don't get tired I just get better then it's time for some beers. The meat god has some new ideas and I take his ideas seriously. Do what he says and he doesn't yell, so I do what he says and continue to get smarter...or at least not yelled at.
