lmao@automated greetin...I HAVE to get a pic of our *belly knives* ya'll would bust a GUT...I rarely get stuck on the table breakin days ribbin bellies but I have been there an theres 2 knives your given BOTH are home made jobbies..Neither will hold an edge for shyte and both are really flexible more like extremely think workin with a blade the consistancy of a slinky lol..Sooooo I usually use boning knife unless the boss is doin a walk through then he'll stand there ensurin you use the belly knife...But ya get a good rythm goin done swivel up ribs go this dish check for bone n such belly through the skinner partner on the other side catches checks for more defects trims an in a combo for pumpin for bakin...Keep in mind you do 2 bellies a minute and skin 1 butt...
Those knives are called Denver rib knives. All big plants use them. Once they get dull they are a little tricky to sharpen as they have two 90 degree angle on the ends. Thanks for posting the video.
I think I read an article about this or another model of a 'robot butcher', you should see all the comments by average people underneath though haha. Calling it an "abomination" and plenty claiming they'd never buy a steak unless a human butcher they can talk to cut it
