just wondering.....


just wondering,what is a delmonico steak to YOU? different answers from different parts of the country. sooo....please post your answer BEFORE you check out this link.   http://www.steakperfection.com/delmonico/Steak.html    pretty good read!!! btw...welcome back Captain!!

A Delmonico steak was always a boneless rib steak to me, until i was talking to my cousins from alabama and to them it was a boneless loin strip steak. I definetly had to do some investigating after this and came to find out about the restaurant Delmonico's? After that i came to the conclusion a delmonico could be any cut mostly because it was just what they called a steak in their recipes a delmonico steak? I hope that makes sense i tend to ramble sometimes haha.

Most markets in N. California that I've been to don't call anything Delmonico's. However, where I work we have them. They are boneless rib steaks from the small end. Large end boneless rib steaks are called "market steaks" at my store. Prior to my current store, we never used separate names for either end. They were all just called "rib eye steaks" which I wish we did because almost every day, someone asks for rib eyes. Then I have to explain about the Delmonico's and Markets. Then I have to add that the rib steaks are the same thing but with a bone. Too much talking.
BTW, another market about 30 miles from my store sells Delmonico's, but their Delmonico is what my store calls New York which is boneless loin steaks or "strip steaks".
Maybe Delmonico sounds nicer than rib eye and the name change alone is worth another $1.00 per pound? The so called "high end" markets need to justify their price somehow.

Another old post I miss out on, must have been one during my many computer failures, I think I have went through 4 computers since starting the club lol 

 

I was alway taught it was the first three off the small end.

Where I'm from a delmonico steak or delmonico ribeye is a chuck eye steak.
