One of my favorites is slicing rumps, tips, chuck roast thin with a boneless blade and tieing them for 50 cents a lb. more. women love them because they don't have to worry with slicing.

I have found a few youtube videos on tying meat but I have yet to find one that shows the proper way to tie meat. at least it doesn't appear that way to me. i have been meaning to make a video myself for everyone to see how i do it,. i might beable to do that tomorrow and get back to you. but no promises LOL
If you are located in a high hispanic community I would really reccommend this. Saves a lot of time, Carne Asada, I hate having to stop and slice 5 or 6 roasts thin for a customer, one after another, slicing 100 lbs at once and packing it in 5# packages is awesome not only can you get the .50cents more per lb. but also save a lot of time. Tieing the roasts would make great eye appeal for someone who wants to roast but not slice and serve.
