Cumberland Gap hams, Whole and Half Semi boneless. They are green/grey on the inside. you can only see it if you cut the ham open. Any reason why this would happen?

Sounds like improper brine injection or wrong sodium nitrite level. If not enough cure is use, it will turn green/grey.
