IN PARTNERSHIP WITH THE BUTCHERS’ GUILD: A FARM TO CASE GUIDE TO THE MEAT BUSINESS

The Business of Butchery (April 5 - 15) is an intensive class for aspiring entrepreneurs seeking to build food craft skills and grow business expertise in how to own and run a farm-sourced butcher shop. This journey will develop your understanding of what it takes to make it in the meat industry. Classes take place in two parts, giving students the option to enroll in a one-week farm visit, three days full of butcher shop visits, or a complete two weeks of farm-to-case education. Classes take place throughout Northern California, including Oakland, San Francisco, Chico, and Siskiyou Counties, where you will learn to foster relationships with ranches, slaughterhouses, distributors and customers. You will also have the option of gaining butchering chops from some of America’s foremost masters of the craft. Spend two weeks immersed in the most innovative and successful butchery businesses in the country, so that you can start your own!
