This must have been in some meat discount store where they were running them with no trim

Uhhuh. I worked in stores that forbid us to trim NY Strips when they were on sale. Their motto was "at this price the customer can trim it themselves."
I worked for a company once, United Grocers, they were like that, dumb ass Meat God would buy Strips at 2.99 a lb and put steaks in the ad for 2.99
lol they cut straight off the loin, we are a 1/4 trim market
