Wilsonton Meats butcher Byron Allsopp is heading overseas to learn from international butchers after winning gold in the national WorldSkills competition.Kevin FarmerWILSONTON Meats butcherByron Allsopphas been given the opportunity to expand his butchery skills thanks to two international scholarships. After receiving the gold medal for retail butchery at the 2014 WorldSkills Australia National Competition, Mr Allsopp was invited to attend the Big Brother Movement Skilled Futures Program.The program will help him further develop his leadership skills.He was also awarded the Queensland Overseas Foundation Scholarship which will allow him to work in any county of his choice.Mr Allsopp will head to Europe next month to start his journey and said he could not wait."I'll start in the Big Brother program where I will learn leadership skills to help my personal development," Mr Allsopp said."After that is finished, all the attendees will branch off into different directions and complete their own work experience."I have been in contact with several butcher shops across Europe, but I am going to start off in Norfolk at Bradwell Butchery."Working with butchers overseas will allow me to work with different species of animals, such as ox, impala and pheasants, so that will be interesting."The scholarship will allow me to work overseas for up to two years. I'm not sure what type of experiences will open up to me while I am over there."I'm just really excited and can't wait to get started," he said.AXIAL trainer Tony Morgan has worked with Mr Allsopp since he was a first year apprentice and said he was incredibly proud of his achievements."I convinced Byron to enter the WorldSkills competition and spent time preparing him for the competition," Mr Allsopp."So many doors are open to him now and I think he even surprised himself after learning what he was capable of."There is nothing that he won't attempt now," he said.
