I was just reading an old time study test done on IBP User Friendly sub primal cuts that was published by the Journal Of Animal Science in 1992. Personally I think this test is very controversial because for me it is hard to believe; the time study was done in seconds following the same steps. Tell me what you think!

Chuck roll neck off; cut into roast, chuck eye, steaks a few cube steaks and trim 18 lbs. estimate weight.

2"Rib-Eye Lip On; cut into steaks, trim. ( same steps as in the chuck-roll.---13 lbs. estimate weight.
Total Time--156 seconds
Whole Shoulder Clod; cut into top blade roast, & steaks, shoulder steaks & roast, a few cube steaks, a few diced beef, trim. Same steps 30 lbs estimate weight.
There were more time test done on other cuts but for the sake of time and space I only choose these 4 test. So if you want to see more just let me know.
