I am a third generation meat cutter. My dad had a small butcher shop in Indiana, but couldn't compete with the big box stores. He closed up shop and continued to cut meat for Martin's Super Market. I apprenticed for three years at Martin's to become a Journeyman Meat Cutter. My passion is education. You've seen my work through the Flat Iron Steak, checkoff cut chart posters, and my book, The Art of Beef Cutting. For me, it's all about helping to train and educate meat cutters and butchers.
I need your help. We created a Barnraiser campaign http://bit.ly/1MjlP3J to raise money to send students to meat school. We have two potential students that want to use their GI Bill money, but because we are a new school, we are not yet eligible for federal funds. We are raising money to help students pay their tuition.
