What was the first piece of meat you cut when you started in the business, mine was slicing slab bacon, salt pork bellies, slicing the centers out of smoked ham for boneless ham steaks and breakfast ham.
Chicken, and then the next day boneless pork loin, now 6 months in I am allowed to cut everything. I do not do the best job always, but I try to keep my mistakes to non major ones. Ha ha
