How many of you ever used this type of grinder with the big pan. I heard they were the work house of the 70's. old timers have told me they could put 5 lugs of trimmings in it and crank her up, that you couldn't choke it down.
I ground a many of lb through those, I believe it would hold 6 lugs instead of 5. we use to have a hollymatic patty machine that would go on the head, that sucker would shoot out hamburger patties faster than you could catch them
We still use that kind where I work. A different brand. Maybe Biro, I have to check. I don't like it. I like a foot switch and a mixer. Also, ours has a large head (bigger plates). For me, it's harder to form the grind into a good shape for our full service conventional counter.
That's a 5 h.p. Hobart 4046, looks like it's in great shape. No rust on the legs or body. No dinged corners of the feed pan. Even the Hobart tag is still attached. I'd put new covers over the on/off switch buttons to keep them from getting jammed. As long as the cylinder, ring and worm are in good shape that grinder will work for a long long time.
They were the work horses in most markets I worked for in the last 15 years. I liked them. In some stores we had to carry the steel pan to the sink though. It was heavy. The plastic pans were easier to manage but they cracked too easy.
I used the Grinder/Mixers too. They are easier to use, but I find them to be a pain to clean very well. I don't like reaching keep inside and trying to get every tiny microscopic crumb off the walls.
These are easy to clean.
