there is a manager, lead cutter( training for a manager spot), a middle man, a float (me) and a part time closer. unless we get hammered there is usually me and another cutter, our manager and lead cut also when needed.

Nice looking case there Abe,  you sell many of those tomahawk chops, we take a little more bone off and call them cowboy steaks, we sell a good many during the summer months
