mainemeatman's chopped sirloin steak

... about ten years ago I ordered a chopped sirloin dinner at a diner and it was burger, so I tried this at the store and have been selling it ever since- run ground sirloin through the cuber- sounds foolish, but it sells

I had most success with it when I made it into a nice round patty and then drop it through the cuber once.  However one time I tried it in a different store with a different cuber that had crooked teeth and it wouldn't stay together.  Make sure your cuber has good teeth and make the meat into a nice 1/4 pound patty and drop it through.
