boning out chickens/turkey to stuff


Do you offer this service and is it free. Someone linked a few months ago to a link on how to do it does anyone remember it. My brother s chef does it for people around christmas and charges 20 gbp a go.

Is it easy to practice on chickens and just upscale to turkey?

what im really asking is how to do it without cutting the skin i know there is one way of doing it just removing the bones and leaving a hollow shape and another way of cutting the skin and slicing down to the bone first before removing then so the carcass is flatter for making rolled stuffed chickens turduckens ectc

We bone ours leaving the skin intact. Start at the neck and the bung and work our way in. It is difficult to get the carcass out as you end up turning the bird inside out to do it. We do it several times a year especially round the holidays when we make turduckens. I have purchased turduckens from others thinking I would save my time and labor and have been less than thrilled with what I got. They all seem to bone along the backbone, then when all is done they stitch it back together. Not a fan of that.
We will do this for customers but do not advertise that we will debone whole birds for them. No extra charge, just weigh the bird before we start.
