Graduates of the Chicago Butcher College will fill a crucial role in the new food system to meet the increasing demands of the health conscious consumer. A system of sustainable, humanely raised, locally pastured meat, from local farms that is free from antibiotics, steroids and hormones.
Highly skilled in butchery, a Chicago Butcher College apprentice is trained to honor each animal by utilizing every part of the carcass and treating every cut well. Like the emerging artisan butchers of Europe, CBC graduates will be knowledgeable of the meats origin, breed and handling practices of the farm the animal was raised from and compassionate of the sacrifice it made so we may live.
Today’s American Butcher that graduates from the Chicago Butcher College will be the custodian of the “Good Meat” movement and a vital social and economic link to a better food system. A system that is; Better for the environment, Better for the animals and Better for the health welfare of the population.
