Butchers making a comeback

Over the years many single owned butcher shops have been forced out by the convenience of large grocery stores. As a result an art form and connection from farm to food has been lost! But in the last few years as consumers are becoming more demanding of knowledge of where their food comes from, young butcher have seen an opportunity to strike. There are several butchers still around but they have become less and less accessible by the general public.  With the new wave coming; young and experienced butchers alike are getting a second chance to bring back an amazing art form. The thought of walking into a small shop and chatting with the butcher and learning something new about the farms they use has a certain excitement to it.

many meatcutters/butchers could successfully own and operate their own place-butcher shop

it doesn't have to be a large butcher shop
but you do have to be different/better
