Cutting Wagyu sides


Club Member Jeff Parrish had the pleasure to cut these beautiful Wagyu sides..Takes more time than a regular side but he loved lt.

Leon,
I should have explained the reason for the longer processing time.It normally takes me around 1.5 hours to cut,bone, grind a regular Angus side.
With the Wagu side most of it is boned and sliced by hand,the only time a saw is used is just to quarter.The force needed just getting a knife through the marbling is a chore.The majority is usually presold,with very specific weight and thickness requests.The grind has to have all external fat removed because of the extensive marbling throughout.From start to finish the time is around 2.5 hours per side.

These were close to 1000 lb dressed(total).After halving the side I do alot of cutting the hind quarter while standing on a ladder,that way I can cut the tendon and be able to drop it on a block by myself.Its more of letting things fall as there is no way I could manhandle it.
