Club Member Adam Tiberio, of Tiberio Custom Meats,  New York giving a demo at the amazing facility at Belcampo Farms, Ca.

 Belcampo is a lot of things: a farm, a processing plant, a neighborhood butcher shop, a restaurant.

 I first met Adam at the NCChoice's meat convention last year, he is a up and coming star in our trade. He gives a lot of demos across the country and a young man Kari Underly calls on a lot to help her.  Below he is at the NE meat convention.

Lot of wasted movement on the shoulder ..Its much easier to remove the neckbone first then seperate the picnic and butt..Its right either way but for production it matters if it takes minutes or seconds.
