the old one learning new tricks


Many people try to call me a Master Butcher, I don't and the reason why is I never had the opportunity to learn sausage making over my years of cutting meat, the few butcher shops I worked I again was to busy cutting red meat. to be a Master butcher you must know how to make the 100's of types of sausage. Since I have always tried to educate myself in our trade and have worked hard to sustain that focus, although at times i fail to protect that focus because of chasing women lol Since i retired three years ago I have got off into learning sausage making at home. I must say for me it's been a pleasant experience and a rewarding one lol I made some Italian links this past week and smoked some of them, i think the color came out well.
