Hello, first let me start off by saying I have been around retail cuts for 10+ years. All I have is boxed situation cutting. I am looking for a step further, I would like to find a place in southern MS or eastern LS to clean and dress alligator. Second, I am looking for a place to break down beef and hog. I am willing to pay for the time, as well as learn. Please contact me via e-mail if you have or know of someone that is open to this. Reason for me wanting to further my skill is I would like to open my own processing area.

Phillips Seafood  ( wholesaler )  in Bayou Pigeon La. handles alligator   See if they can help  or  recommend somebody that can    Good luck   Bob

If you want to come up to Wisconsin I do Whole Beef and Hog Processing daily
Can also help you in tuning your animal selecting skills etc
