I know we offer a 10" butcher knife with Granton edge, and a 12" without Granton edge. I'll double check on the 12" Granton on Monday when I return to the office.

thanks I know they make em. I already have 12" w/o Granton edge and 10" with Granton. The Granton edge does make a difference. Less "stickiness" when slicing therefore less "drag" and stress on this ol shoulder of mine! lol

The new VX-Grip knife comes in a few styles/sizes: choose from 5" or 6" flex, 6" semi-stiff or 6" superflex.

Mimeatguy: I spoke with our catalog sales manager this morning and found out we do offer a Victorinox 12" granton edge butcher knife but had not been stocking it previously. Our sales manager is going to bring some into stock. These normally sell for $76.65 each, but the sales manager said she'd sell them to you for the box price of $51.23 each (the price if you normally buy 6 at a time). Just give us a call at 800-456-5624. The item number for the 12" granton edge is: 336740671 and just for your reference, Judy Beiriger is our catalog sales manager and she's the one who said she'd sell it to you for that price. Let me know if you have any further questions.

Ok dun deal vx on the way and 12 in. Granton will ship when they get em. Thanks, hope they send a catalog also! I bought a lot from Koch years ago when setting up my business. Always were good to deal with :)

Got my VX grip knife today haven't tried it yet but it feels pretty scary without a front finger guard. Gotta have a lot of faith in the grip qualities of the handle but idk one bump and hand goes down the blade yeesh don't need that! Maybe I can make one. I've seen guys do that with rubber bands before.  Anxious to get that 12'' Granton tho and put it to work!

I thought the same when I saw it. Maybe wear a cut resistant glove on your knife hand. I understand that that knife is mostly for kill floor applications where you are boning meat on the rail and therefore hold the knife backwards, if you know what I mean.

55plymouth is correct. The new VX grip knife was designed based on requests from kill floor butchers. Since they were holding it backwards and using it for dagger positions, the finger guard posed issues for them.
