NICE! been there done that! i used to run 2 shops that had 52 feet of full service case.... a lot of work
now i am helping a group of stores and the main store i am working with has 66 feet of full serve in a hispanic market....which is a little different than what i was used to....but bottom line is all the same....keep it cold, keep it fresh, cut it right, have plenty of great customer service and it will sell!
