How many of you still cut this


Many years ago baby beef was a big part of our meat case, most of the time you would cut 10 fronts, then 10 hinds, come back and cut 5 of each then do ALL that boning off it. Middle 70's it started slowing down, most young people don't even know about it now.

Isn't baby beef called Veal? Yeah I cut veal, not at my current location but i did in virginia.

I think we used to call it a calf-ette or something like that cut a lot of veal years ago in the north suburbs of chicago

a lot of the time veal that small is just un-wanted un-needed bull calves from dairy farms. Something they'll have no future use for. The female calves get to stay and produce milk for several years, but the males go straight to the market.

Just like in poultry, (sometimes) the females are for eggs, the males get eaten earlier. I think the males have it easier.
