Not sure, haven't had time to run it down with a couple French butchers friends on Face book yet, But I think it's circa 1900.  The bulls head at the top, which was typical of butcher blocks of that era.

I can picture that in an old royal castle where the butcher was held in high esteem/status

who is from a long family of meat cutters,  her husband is a butcher, her father, grand father and her brother.  Has talk with her father about this block, he puts it at around 1920
