wanna bet? Although those were the first things I opened for the day, my block usually stays pretty clean. I believe the less mess I make the less I'll have to clean up later. Usually works out. I open everything in a lug with some foam trays in it acting as a drain board. No point in soaking all that blood into the board. I keep dry towels handy to wipe down so I don't have to chase the meat around the table and a sanitizer towel handy to keep block and knives clean. Everybody's different but that's the way I roll. I know you're just making a joke & I'm cool with that but it does bring up a good topic. It's frustrating when you work with someone who makes as big a mess as humanly possible and really don't gain anything by doing so, in fact quite the contrary just makes a lot more work for the end of the day when your tired and it's beer:30! lol

Right on Doc! That is ONE of the "slob" things this dufus I know does. For a while I would hang towels over the beams in the table to absorb all the blood but I gave up on it. He never had solid training and thinks I'm "picky" if I try to show him better ways. So f it! I just do my own thing on my own block. Don't come makin mess's in my space tho! I'll take you out HA! lol! Worked by myself yesterday and had 30 min clean up & sanitize. That was nice.
