Just touching up on a previous thread, I know Kroger and Safeway have detailed cutting lists. How about other chains? are they computer generated or do you have to spend an hour or more forcasting production need? Does it really help shrink? Are you forced to carry items that you know will be 100% shrink?
Where I am now we cut what we need. Look at yesterdays sales, see how much is in the counter, adjust for the day... cut.. Love it. We dont have to cut things that dont sell, lots of freedom. Where I was before we had computer generated lists. gp was 19 percent. now where I am gp is 33 percent. Tells you how good those computer lists are for business.
I have used the computer generated ones before, where I worked before, did not like it. I too have freedom but getting harder. I am learning how to go from 1 sheet of fairly detailed needs for 3 cuts per day to almost a dozen pages of the same info. It is all just a "Guide" I am ultimately responsible for my shrink and markdowns. Sometimes my crystal ball is cloudy and I dont sell everything I cut and sometimes its crystal clear and even though on paper it may look like overcutting it turns out to not be enough. If you can squeeze in a more profitable cut that will sell, why not be able to choose what mandatory everyday item has to go to fit it in. I guess I am feeling like there is more paperwork shifting to dept. Is that what we have a Corp. Office for? Officeworkers? Am I unkowingly taking soeme elses job away from them? Sometimes it feels that way. Where is my cubicle?
i go through every pack 1st thing pull the dark then make a list to fill the holes cut the sale items to keep ahead then play it by ear the rest of the day dont want to over cut
Our counter is the list. We look at it and see what we're low on and then we cut that item. There is also of course the holding room/bloomer where we keep back up. That's part two of the list.
We've talked about lists in other threads and I've expressed strong opinions on them.
Feel ya braker. Management has lost their minds. Their newest thing in my store is to push the night cutter back. Yet they have no problem with one cutter days to save on OT
