Neat video. How does she stay so clean in that outfit? Her knife sure is sharp. She really knows what she's doing. I like to take the blade bone out a little cleaner, but I think she said she's using them for stock.
Most people don't see shoulders like that now. It's usually a Boston butt or a picnic, but not together and not with the foot or neck bones.
She's cool!
