Wow! What a fantastic meat case. I love your pictures! It's interesting to see a loin and rib together. You never see that here in USA. You see forequarters and hind quarters, but never a rib and loin together. Do you order it that way? You can't get an entire side of beef not separated front to back in a retail shop, can you?. I mean it would be too tall to work with in most buildings.
You have a nice smile and sparkle in your eye that you almost never see in a meat shop. It's obvious you love what you do.

Did anyone notice the picture of the muckle coo? It's hard to see because light is reflecting on it, but it's a muckle coo for sure. It's a nice piece of art.

Highland cattle or as some people in Scotland call them, "muckle coo" are an ancient Scottish breed of beef cattle with long horns and long wavy coats. The breed developed in the Scottish Highlands and Western Isles of Scotland
