So there was one year that, in the meat shop I was running, we had a TON of corned beef that were all leakers.....way more than usual. So the question was....what to do...what to do.
We already made over 15 kinds of fresh sausage links...beef, pork, chicken, turkey. So we ground the leakers through the chili plate once....mixed in a whole bunch of chopped green onions and a couple bags of diced frozen potatoes...mixed in the grinder and shot it into hog casings and BAM we had CORNED BEEF BRATS!!!
that is one of the things i miss the most.....all the ideas we tried out on a daily basis...some worked, some didnt.....but that shop still sells those brats every st pattys day....and it outsells the corned beef.
Sounds like a winner. I can't wait cause I get decked out in the green . I'll sell plenty of Corned beef briskets, but not as much as what I sell for New Years.
Sounds good! I can't wait till St Paddy's day as well. I'll sell some Corned Beef Briskets, but not as much as New Years. I'll be decked out in my green as well. Might green out my stach also.

Corned beef is OK to eat once or twice per year. Any time. Doesn't have to be March.
I don't like this holiday (but I LOVED it when I was a child). It's a pain. Probably I chose the wrong trade. People really mess up the corned beef packages in self serve cases. I'm not Irish and wont pretend I'm Irish and I think it's silly for non Irish people to do so. If I wore a sombrero on Cinco de Mayo (or Sept 16), I'd probably get in trouble. OTOH, my ex boss provided green hats for those who wanted them and that was supposed to be fun.
The corned beef described below is a bigger pain. It's messy and people often don't want any of the dozen or so choices in the counter. You have to cut a new piece or change one that's in the counter. BUT at least we have enough help. Gotta admit that.
Until about 8 years ago, we made our own corned beef. Most of it (pumping and brine mixing) was done by a clerk. Now a local company makes it and brings it in huge barrels (I posted a picture one year) the size of large whiskey barrels. It's loose, not cryovacked. Whole not trimmed bottom rounds with eyes attached and not trimmed large briskets. We trim and cut it as needed and put it on the ice in our full service counter.

St. Patricks day falls on the same day as "Passion Sunday". It's on the calendar and it will still be celebrated and sales will revolve around it. The real killer is that Easter Sunday falls only 2 weeks later! Double whammy.
