.New Generation Butchers Revive the Craft .


Being a butcher may not seem like a dream job to you, but in this episode of Subculture Club, we visit three independent butcher shops in the San Francisco Bay Area and reveal how the job has become a whole lot hipper and more desirable than it used to be. This generation of foodies and meat lovers want to know where their meat comes from and as a bonus have a relationship with their butchers (just like the old days). Watch and see how your boutique butcher shop is helping make the connection between the farm, the meat and what you eat!

I 100% identify with these guys. I worked 5 years to complete my bachelors degree in business administration and I moved to San Francisco to get a fancy office job. I worked in my little cubicle and hated every minute of it. After a few years I threw it all away and decided it was time for a more authentic life. I took my savings and built a yurt in the hills and raised goats and sheep and sold them to these butchers in the bay area. It was fun but I never really made enough money to justify all the work. Now I'm in butcher school and I'm saving money to go to Europe when I'm done. My plan is to find an apprenticeship in an butchershop and learn the old school techniques. When I return I'm going to start selling sausage at farmer's markets and work towards opening my own shop.
