I have a very simple suggestion for you. Stuffed pork tenderloins. I stuff mine with spinach ad fetta cheese, or a nice Apricot walnut and cranberry dressing. They make ma nice presentation. I truss my tenderloins by using 5 inch swewers placed along the length of the tenderloin then threading twine along each side of the skewers. You are only limited, by your imagination :)
