Summary: To take ownership of the butcher shop developing the department through solid standards and technique. Responsible for all aspects of meat, poultry and fish fabrication. To include portioning, de-boning, skinning, scaling, grinding, and cutting. The butcher shop is responsible for all proteins in the following outlets: The Tavern, Charles Court, The Penrose Room, Summit, Golden Bee, Golf Club, Lake Terrace Dinning Room, Room Service as well as Banqueting operations both Hot and Cold. Responsible for training of staff, sanitation and safety proper receiving and storing of food items.
