Thanks guys. We're losing a guy to retirement next month, maybe another who wants to get out because he found another line of work he wants to try. I'm a cutter but i am the low man on the totem pole in the dept. so i mostly wrap and wait at the service counter. We'll be losing another guy in a couple years to retirement.

I am the youngest here at 51 years young. I am hoping I can move into the cutting position next month but we can't even find anyone to take my place as an apprentice/wrapper/counter/clean-up guy. The last guy we had was 18 and he only lasted about a month. We've had 4 guys come in the past year, and I am the one who has to show the ropes. (sigh) Seems as if Im never going to get on the boards.

fdarn, got Leon's e-mail about the shield idea. I'm going to work on that tomorrow..

i went to two years of schooling in Seattle- King County, Washington State. Mandatory ( Very glad and proud of it ) if You wanted to cut in King county. At first i thought it was a waste of time. How and what was I going to learn in a class room, Note: we did make some field trips once in 3-6 months. Poultry plant twice and a meat shop twice to cut up a Pig from carcasses being same to beef. that I made.
Lots of reading, mostly to the propaganda and what the Grocery industry was doing to the trade.

Me starting in 1989. I was called a Box cutter from the older guys. Being Beef was by then only coming in . in boxes, but at lease then it was still primal cuts and had to be still broken down.

Most I learned was to how to Manage a shop, The Super market math, Margins VS Percentage profit. BIG difference and Inventory control, clean way and Safety of handling Products.

The industry and the CONSUMERS MOSTLY is in great need to skilled cutters, But how you going to sale the future of it ?

If, we do not change the top end of things !
I hope and dont mean to rain down on this, No , glad for it, just asking.

If You got any articles, input to making or educating the public , pleases pass them on, I am try to get together on a FREE report- Too voters, Educate, HOPE this to be a live report for things keep changing.
Over government, Finances, Wall Street, Banking, YES Our food supply, is in a World of hurt in my book.
