I just met a guy who works in a retail grocery where they only cut box meat, and there is a veteran cutter there who does most of the cutting so he doesnt get to cut much at all. I only cut whole carcass and Im the only cutter so on his days off he comes in and works basically for free just to learn and actually get some cutting time! Not many people left who are willing to work just to learn!
