DO OUR OWN....WHEN I FIRST STARTED IN THE BUSINESS, WE HAD A "SERVICE" THAT BROUGHT US KNIVES EVERY 2 WEEKS, THEY ROTATED THEM OUT AND WOULD SHARPEN THEM....SEEMED LIKE THE "SERVICE" WAS A WASTE OF $$ CAUSE WE COULD DO IT BETTER OURSELVES
we do our own and the customers when they bring them to us. i still have a big sign in my shop that says free knife sharping
What method do you use for the customers knives? Not your own, the customers. No way do you do it free hand, right? My previous company had Tru Hone machines at every store and those were what we used. I say the machine is junk and I posted in the old site about it.
The machine may be OK if used carefully by one person, but there's just too many people abusing the machine. The stone wheels quickly get "out of round" and spin like lop sided like eggs.
A great machine in theory with the variable speed and different angles to chose from, but in reality, a piece of junk (in my opinion)
I personally like the "Edge Pro". I posted about it before. I have not seen this particular video. I just found it this minute for you all.
